Pumpkin Butterscotch Muffins

It’s fall and Pumpkin Butterscotch Muffins are the only things you need to keep you cozy this season!

So this is the point and time of my journey where you all finally find out how BASIC I really am! I am all about the Fall for one main reason, PUMPKIN SPICE EVERYTHING! There is no flavor that I enjoy indulging in more than pumpkin spice and I fully intend to take advantage of it for this season as well. The only difference is this time, I’ll be sharing it with all of you too! Fall is a time where it starts to get chilly and all you want to do is wear a big comfy sweater and curl up on the couch with a steaming hot mug of apple cider and my Pumpkin Butterscotch Muffins! It’s the perfect dessert, snack, complement to your tea/coffee, or if you’re feeling adventurous, a sweet treat for breakfast! If you’re looking for something healthy, this probably isn’t it for you, but if you’re looking for something to indulge in and embrace Fall, then you’ve come to the right place! If there’s one dessert of mine that you have to try, it’s definitely this one!

These muffins are a sweet treat made with pumpkin butter, pumpkin pie spice, and cinnamon. They are perfectly moist and the butterscotch chips just melt in your mouth. These are super quick and easy to make so don’t be afraid of the list of ingredients! You are definitely going to want to give these a try! I used the Trader Joe’s Pumpkin Butter in this recipe and it was absolutely delicious! Also, your home will smell like a Fall Wonderland while these are baking in the oven, which is always an added bonus! So don’t be shy and give this a try! Pumpkin Butterscotch Muffins

Ingredients

Wet Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 eggs room temperature
  • 1/2 cup unsalted butter melted and cooled
  • 2 tbsp whole milk
  • 3/4 cup pumpkin butter
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 1/4 cup all purpose flour
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 2 tsp pumpkin spice
  • 1/2 tap cinnamon
  • 1 tsp salt

Mix-Ins

  • 1/2 cup butterscotch chips plus extra for topping

Glaze (optional)

  • 1/2 cup powdered sugar
  • 2 tsp milk

Instructions

  • Preheat oven to 375 degrees
  • Mix all the wet ingredients together in a bowl
  • In another bowl, mix together the dry ingredients. Add the dry ingredients to the wet and gently mix until combined, be careful not to over-mix
  • Add the butterscotch chips to the mixture
  • Scoop mixture into well greased muffin pan and fill till about 3/4 of the way full
  • Top with a few more butterscotch chips and bake for 15-17 minutes or until toothpick comes out clean
  • Allow muffins to cool and drizzle with glaze and enjoy!
