Pumpkin Butterscotch Muffins

Wet Ingredients
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 2 eggs room temperature
- 1/2 cup unsalted butter melted and cooled
- 2 tbsp whole milk
- 3/4 cup pumpkin butter
- 1 tsp vanilla extract
Dry Ingredients
- 1 1/4 cup all purpose flour
- 1 tsp baking powder
- 3/4 tsp baking soda
- 2 tsp pumpkin spice
- 1/2 tap cinnamon
- 1 tsp salt
Mix-Ins
- 1/2 cup butterscotch chips plus extra for topping
Glaze (optional)
- 1/2 cup powdered sugar
- 2 tsp milk
Preheat oven to 375 degrees
Mix all the wet ingredients together in a bowl
In another bowl, mix together the dry ingredients. Add the dry ingredients to the wet and gently mix until combined, be careful not to over-mix
Add the butterscotch chips to the mixture
Scoop mixture into well greased muffin pan and fill till about 3/4 of the way full
Top with a few more butterscotch chips and bake for 15-17 minutes or until toothpick comes out clean
Allow muffins to cool and drizzle with glaze and enjoy!
