Chai Spiced Sugar Cookies

Delicious holiday sugar cookies, with a little twist!

The holidays are meant to be a time of indulgence, with all the yummy food and sweet treats! The thing I look forward to most during this time of year are the most delicious desserts! It’s a time where I “worry about the consequences later” and just enjoy it all in the moment! Even though chocolate chip cookies are one of my favorite cookies, I love to indulge in sugar cookies during this time! But I wanted to add a fun little twist to these cookies; so I present to you these Chai Spiced Sugar cookies! They’re all the flavor and fun of sugar cookies, with the added taste of chai spice! It’s basically like drinking a cup of chai with a sugar cookie on the side all in one. These cookies are definitely indulgent, but not overly sweet. The chai spice gives the cookie a really nice flavor and will remind you of home! The cookie itself is the perfect combination of soft and chewy and is utterly delicious! These are also the perfect treats to leave out for Santa on Christmas Eve, I promise you he’ll love it!

These cookies are great for kids and adults alike and they pair perfectly with a tall glass of cold milk, a warm cup of hot cocoa, or enjoy them with your coffee or chai! It’s the perfect little holiday treat that you definitely won’t want to miss out on! Not to mention, it all comes together in just under 30 minutes! What more could you ask for! Here’s a few tips to make these cookies the absolute best that they can be:

  • I used a Madagascar vanilla bean, which gave it a really nice rich vanilla undertone, but feel free to replace with 1/2 tsp vanilla extract if you don’t have a vanilla bean
  • After removing the cookies from the oven, allow them to cool on the tray for about 2 minutes before removing them to cool on a wire rack
  • Feel free to adjust the size of the cookies to how big or small you want them to be, just note that will change the quantity
  • I baked these for 10 minutes, but different ovens may require different cooking times, anywhere from 8-11 minutes
  • If the cookies are too thick for your liking, just press them down flat a little when putting them on the baking sheet rather than leaving them in ball form

Chai Spiced Sugar Cookies

Ingredients

  • 2 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup granulated sugar
  • 2 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp ground cardamom
  • 1 cup unsalted butter softened
  • 1 egg
  • 1 vanilla bean or 1/2 tsp vanilla

Instructions

  • Preheat oven to 350 degrees
  • In a bowl, mix together sugar and spices (cinnamon, ginger, cardamom). Reserve 1/4 cup and set aside
  • In another bowl, sift together the flour, baking soda, baking powder, and salt
  • In a stand mixer with a paddle attachment, mix butter and remaining sugar mixture until fluffy. If you don't have a stand mixer, you can use a bowl and an electric hand mixer
  • Next, add in the egg and the vanilla and mix until fully combined
  • Slowly add flour mixture to wet ingredients and mix until just combined
  • Using a cookie scooper, take about 1-2 tbsp of dough and roll into a ball and cover in the sugar mixture that was set aside
  • Place on baking tray lined with parchment paper about 2 inches apart
  • Bake for about 10 minutes or until fully cooked and enjoy!

Notes

  • I used a Madagascar vanilla bean in this recipe, but you can replace with 1/2 tsp of vanilla extract if you don’t have fresh vanilla
  • I baked the cookies for 10 minutes but depending on your oven, timing may vary from 8-11 minutes
  • Feel free to make each one larger by adding more dough, but these will be cookies that are about 2-2.5 inches wide
