Mediterranean Tostadas

Crispy almond flour tostadas, slathered in beet hummus, topped with fresh crunchy veggies tossed in a light dressing makes for a healthy and delicious meal!

Move over Taco Bell! The healthier, tastier, Mediterranean version of those Mexican tostadas we know and love is here! I’m talking crispy baked almond flour tortillas, slathered in a creamy hummus, topped with fresh, crunchy salad topped with some feta cheese and all the fixings! This is such a light, refreshing, yet filling meal, perfect for your health conscious days! I was really craving a tostada but I didn’t want a traditional Mexican one, so of course my mind starting thinking about how I can create a fusion twist but still get the same flavor and taste to satisfy what I am looking for. And the Mediterranean tostada was born! It’s guilt free, but also tastes so good that you won’t even realize it’s actually healthier for you! I promise you’re going to want to add this to your weekly meal prep list because it’s just that good, not to mention it’s super quick and easy to make! The only cooking part is of the tortilla’s and that takes no more than 5 minutes; the rest is just assembly!

Here’s a few tips to make these the best tostadas ever:

  • I used the Siete Almond Flour tortillas baked in the oven for these tostadas
  • I used both oregano and Za’atar seasoning to add some flavor to the mixture but you can omit the Za’atar if you don’t have any
  • I slathered a layer of my Beet Hummus on the tostada but feel free to get creative and use any hummus of your choice
  • For a little added spice, feel free to top with a pepperoncini

Mediterranean Tostadas

Ingredients

For the Tostada

  • 2 almond flour tortillas
  • 3 tbsp hummus any flavor
  • 1/3 cup feta cheese
  • Tzatziki sauce for drizzle
  • fresh parsley chopped for garnish
  • 2 pepperoncini peppers optional

For the Salad Mixture

  • 1 cup cucumber chopped
  • 1.5 cup shredded lettuce
  • 1/4 cup black olives sliced
  • 1/4 cup onions diced
  • 1 tsp Za'atar seasoning

For the Dressing

  • 1/2 lemon juiced
  • 1 tbsp extra virgin olive oil
  • 1 tsp red wine vinegar
  • 1 tsp oregano
  • salt and pepper to taste

Instructions

  • Preheat your oven to 400 degrees and bake the almond flour tortillas for 4-5 minutes, flipping halfway through, until golden brown and set aside
  • In a small bowl, add all ingredients for the dressing and mix well until fully combined
  • In another bowl, add all ingredients of the salad mixture and pour the dressing over it and toss until all ingredients are mixed well and the salad is fully coated with the dressing
  • Spread a thin layer of hummus on each tostada, about 1.5 tbsp per tostada
  • Add half of the salad mixture on each tostada covered in hummus and sprinkle feta cheese over both
  • Drizzle a bit of Tzatziki sauce on each tostada and garnish with fresh chopped parsley and a pepperoncini
  • Serve immediately!

Notes

  • I used the Siete Almond Flour tortillas for this recipe which can be easily found at Whole Foods or Walmart
  • I used the Trader Joe’s cucumber Tzatziki sauce for the drizzle, but any brand is fine
