Mediterranean Tostadas

Crispy almond flour tostadas, slathered in beet hummus, topped with fresh crunchy veggies tossed in a light dressing makes for a healthy and delicious meal!

Ingredients

For the Tostada

  • 2 almond flour tortillas
  • 3 tbsp hummus any flavor
  • 1/3 cup feta cheese
  • Tzatziki sauce for drizzle
  • fresh parsley chopped for garnish
  • 2 pepperoncini peppers optional

For the Salad Mixture

  • 1 cup cucumber chopped
  • 1.5 cup shredded lettuce
  • 1/4 cup black olives sliced
  • 1/4 cup onions diced
  • 1 tsp Za'atar seasoning

For the Dressing

  • 1/2 lemon juiced
  • 1 tbsp extra virgin olive oil
  • 1 tsp red wine vinegar
  • 1 tsp oregano
  • salt and pepper to taste

Instructions

  • Preheat your oven to 400 degrees and bake the almond flour tortillas for 4-5 minutes, flipping halfway through, until golden brown and set aside
  • In a small bowl, add all ingredients for the dressing and mix well until fully combined
  • In another bowl, add all ingredients of the salad mixture and pour the dressing over it and toss until all ingredients are mixed well and the salad is fully coated with the dressing
  • Spread a thin layer of hummus on each tostada, about 1.5 tbsp per tostada
  • Add half of the salad mixture on each tostada covered in hummus and sprinkle feta cheese over both
  • Drizzle a bit of Tzatziki sauce on each tostada and garnish with fresh chopped parsley and a pepperoncini
  • Serve immediately!

Notes

  • I used the Siete Almond Flour tortillas for this recipe which can be easily found at Whole Foods or Walmart
  • I used the Trader Joe's cucumber Tzatziki sauce for the drizzle, but any brand is fine
