A yummy twist on a South Indian classic that makes for a great breakfast or brunch!
So I made this for Father’s Day brunch and it was a HUGE success! My parents and in-laws have very different taste palettes and I often have to get creative to find ways where I can please everyone. That usually involves being creative and coming up with different renditions of certain classic dishes, no matter the cuisine. There’s a place in Hoboken, NJ called Simply Chai that my husband and I used to go to that served these awesome and creative dosa waffles and we absolutely loved them! When coming up with my menu for Father’s Day brunch, I felt that this would be a great dish to satisfy everyone, so this is my take on brunch style, savory dosa waffles!
These crunchy, yet soft, bites of heaven are so easy to make and you can totally use store bought, ready made dosa batter to make your life easier, like I did! You can also get creative with the toppings but I felt that green and tamarind chutney would be a great replacement for the typical syrup that is used on regular waffles. And of course, why wouldn’t you want to add some of that delicious grated Amul cheese on top?! I don’t know about you guys, but I love cheese and I love cheese dosa’s, so it only seemed fitting to add it as a topping! The sev helps give it a nice crunchy bite and the cilantro just finishes the dish and brings it all together!
Honestly, there’s not much more I can say about this dish because it’s so simple and so delicious. You just have to give it a try and I promise you won’t be disappointed! Let’s just say, I had absolutely no leftovers of these bad boys and I’m sure you won’t either! I hope you guys will add this to your next brunch and enjoy it as much as my family and I did!
