A traditional Mediterranean dip with a colorful twist!
I always love me some good Mediterranean food and the best part about it is the dips that come in the beginning! Hummus is one of my favorite dips! It’s so versatile, you can dip it with the traditional pita or you can chop up some fresh veggies and dip it for a healthy snack! Of course, regular hummus is great and will always be a classic, but over time, so many flavors have been mixed in with this dip to create a ton of different options to satisfy any palette! One of those flavored mix ins that I’ve recently grown to love are beets! Beet hummus is so delicious, creamy, has a slight hint of sweetness, and not to mention, it’s absolutely beautiful to look at! Who doesn’t love eating pretty foods!?
Growing up, there were many different foods that I didn’t love, beets being one of them. But as I’ve gotten older, I’ve learned to appreciate some of these flavors and tastes more and more and my palette has expanded to include a variety of different foods. This hummus will take you a rich, creamy, summery ride that will have your taste buds asking for more! The garlic gives the dip a nice flavor and the acidity from the lemon juice helps elevate the flavor. I also recommend using a good quality olive oil because that is what will help flavor your hummus as well. I used Love Beets cooked beets for this dish, which made it super quick and easy to throw this together. They are pre-cooked and packaged so all you have to do is chop it up and use it, making it super convenient! This hummus is a great appetizer or easy to whip up for a quick snack! Beet Hummus
Ingredients
- 1 16 oz can chickpeas
- 1 1/2 cooked beets chopped
- 2 cloves garlic
- 2 tbsp tahini
- 1 tsp cumin
- 1/2 lemon juiced
- 2 tbsp olive oil plus extra to drizzle on top
- salt to taste
- fresh parsley chopped, for garnish
- Za'atar seasoning for garnish
- toasted pine nuts for garnish
Instructions
- Add all ingredients except for olive oil to a food processor
- Pulse for 1-2 minutes until you get a rich, creamy texture. While pulsing, add in the olive oil
- Garnish with Za'atar seasoning, toasted pine nuts, and fresh parsley
- Serve with pita or veggies!
Notes
- I used Love Beets cooked beets in this recipe
- You can add up to 3 beets for a darker pink color
