Beet Hummus

A traditional Mediterranean dip with a colorful twist!

Ingredients

  • 1 16 oz can chickpeas
  • 1 1/2 cooked beets chopped
  • 2 cloves garlic
  • 2 tbsp tahini
  • 1 tsp cumin
  • 1/2 lemon juiced
  • 2 tbsp olive oil plus extra to drizzle on top
  • salt to taste
  • fresh parsley chopped, for garnish
  • Za'atar seasoning for garnish
  • toasted pine nuts for garnish

Instructions

  • Add all ingredients except for olive oil to a food processor
  • Pulse for 1-2 minutes until you get a rich, creamy texture. While pulsing, add in the olive oil
  • Garnish with Za'atar seasoning, toasted pine nuts, and fresh parsley
  • Serve with pita or veggies!

Notes

  • I used Love Beets cooked beets in this recipe
  • You can add up to 3 beets for a darker pink color
