Flourless Nutella Cake

This cake is only two ingredients! Yes, only two, and it’s flourless! This rich Nutella cake is perfect for a quick dessert fix!

Hello everyone! I have a super easy, super quick, two ingredient Nutella cake for you guys! This recipe is super simple and super easy, even for those who aren’t bakers! It doesn’t take too long to put together and the end result is a beautiful, dense, Nutella cake that goes great with berries, ice cream, or all on its own! This recipe uses no flour, no baking powder, and sugar is optional! It’s an older recipe of mine that I haven’t made in a while but when you’re low on ingredients, this is definitely a go-to pantry dessert that is sure to please everyone! I mean c’mon, who doesn’t like Nutella!?

I used a Kitchen Aid stand mixer to whip my eggs, but you can use a mixing bowl and a whisk or a hand blender if you don’t have a stand mixer. You may just have to use extra arm strength and a little extra time to get the eggs to the right consistency for the batter. I started to mix my eggs on the lowest setting and slowly increased it to medium-high as time went on. It took a total of 10 minutes or so to get the eggs to the right consistency. Then I slowly folded them in to the Nutella and after a few minutes of gentle folding in 1/3 increments, I got a beautiful, chocolatey, hazelnut batter that was ready to pop into the oven!

Here are a few things to consider when making this cake:

  • Make sure you warm up the Nutella while your eggs are beating so you don’t end up pouring your eggs into hot Nutella, you don’t want the eggs to get scrambled when you’re folding them in
  • Grease the cake pan really well with either a cooking spray, like Pam, or butter
  • Check on the cake at the 22 minute mark as sometimes it may be done a little quicker depending on your oven
  • While it’s baking, you will see the cake rise into a dome shape, but it will settle down while you are cooling it. Let it cool for at least 20-30 minutes before cutting into it so it can properly set
  • Top with your favorite toppings!

Ingredients

  • 1 7.7 oz jar Nutella
  • 4 large eggs
  • 1 tbsp granulated sugar optional

Instructions

  • Preheat oven to 350 degrees. In a large mixing bowl or stand mixer, beat 4 large eggs on high until they have tripled in quantity
  • In a separate large glass bowl, add the entire jar of Nutella and heat up in the microwave for just about 30 seconds to make it softer
  • Fold in the egg mixture to the Nutella in 1/3 increments until no egg streaks can be seen. Feel free to add in a tbsp of sugar at this point if you prefer a sweeter cake (I did not add sugar in mine)
  • Grease a round 9 inch cake pan and pour in Nutella mixture. Bake for 25 minutes, checking at the 22 minute mark to make sure it's not overcooked
  • Allow the cake to cool, dust with confectionary sugar and your favorite toppings (optional), and serve!

Notes

  • You can heat up a slice of this cake and enjoy with a scoop of ice cream
