Air Fried Empanosas

A fun twist on a classic snack that we all know and love!

So it’s a a little less than a month away from Diwali and I wanted to share some fun recipes that would be great for this festive season! I posted a poll a couple of weeks ago asking what types of recipes you guys wanted for Diwali this year. Majority of the votes were for fusion savory dishes, but don’t worry, I have a little bit of everything. You asked, and I listened! So here is the first recipe of my little Diwali recipe series that I’ll be doing! Samosas are like a right of passage for Diwali. You and your family do Aarti and then it’s time to whip out all the delicious food to feast on after! Samosas are pretty much a standard item in most homes for appetizers on Diwali and let’s be honest, it’s probably the part, next to all the sweets and mithai. Of course samosa’s taste amazing in their original form, but I wanted to shake things up a bit, and so, I present to you, Air Fried Empanosas! That’s right. Air fried, so we can indulge without all the oil, and empanada style because, why not?! You get the same golden, crispy, flaky crust, with delicious warm, spiced potato and pea filling, dunked in all that chutney goodness! It’s literally an easier, somewhat healthier, just as delicious version of a samosa!

The filling is super easy to make and has all the fixings of a traditional samosa. For the empanada shells, I used frozen Goya Empanadas. They are convenient and easy to find at most grocery stores. They come in packs of 12 and are already round discs that are the perfect size for you to use. If you want to get really wild, you can even sprinkle a little cheese into the filling to really give it a twist! These are great snacks or appetizers and taste delicious served with cilantro mint chutney or any dipping sauce of your choice! Diwali is a time for food and fun with the family, along with all the other traditions, but we don’t always have to keep food classic, we can shake things up a bit and make it fun! And that’s exactly what I did with these Empanosas! They are so delicious and will give you all the feels of a samosa. You definitely won’t want to miss out on this so give it a try! Air Fried Empanosas

A fun twist on a classic snack that we all know and love!

Ingredients

  • 10 empanada shells
  • 1 tbsp oil
  • 3 medium russet potatoes boiled and mashed
  • 1/4 cup peas
  • 2 tsp whole coriander seeds crushed in mortar & pestle
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • 1 tsp ginger paste
  • 2 green chilies chopped
  • pinch of hing
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1/4 tsp red chili powder
  • 1/4 tsp amchur powder
  • salt to taste

Instructions

  • Heat the oil in a pan on medium heat. Once oil is hot add coriander seeds, fennel, and cumin seeds and cook until they begin to splutter
  • Next, add ginger paste, green chili and hing and cook until raw smell of ginger goes away
  • Add in the boiled, mashed potatoes and peas and mix until it is well combined with the whole spices. Then add coriander powder, garam masala, red chili powder, amchur powder and salt to taste. Mix until well combined then turn off gas and set aside to cool
  • Once the mixture is cooled, take about 1.5 tbsp of the mixture and roll between your hands into an oval. You should get about 10 ovals with this mixture
  • Take an oval and put it in the middle of your empanada shell. Fold the shell in half and seal the edges by pressing them together so it looks like a half moon. Then starting from one corner to the other, start folding a piece of the flap over the other to make a sort of braid or twist shape
  • Brush the empanadas with a little bit of oil and air fry at 375 for 10 minutes
  • Serve hot with cilantro mint chutney!

Notes

  • I used frozen Goya Empanada shells
  • You can fry these if you don’t have an air fryer
