Pesto Goat Cheese Bites

This quick, easy and delicious appetizer is so addictive, it’s sure to be an absolute hit for the holidays!

Alright guys, I told you all that I would have a really fun holiday recipe for you to use my homemade pesto in, so here it is! These super cute, super easy Pesto Goat Cheese Bites, or “Christmas Cups” as I like to call them, are sure to be a hit this holiday season! They are so quick and easy to make and taste absolutely delicious! I mean they are small bites with big flavor, you’ll keep popping them into your mouth without even realizing how many you’ve eaten! That’s how good they are! The creamy goat cheese mixed with the green, garlicky pesto, creates a flavor explosion that you didn’t even know existed! You can totally use store bought pesto for this recipe as well, but I recommend taking the extra few minutes to make it homemade because it just tastes better! These little bites are topped with a small piece of sun dried tomato, the perfect complement to pesto, and a bit of basil and pine nuts. You don’t even really need to top these if you don’t want to, because they taste great on their own, but it just adds some color and texture to the dish which really just takes it to the next level!

Here are a few tips for making this recipe the absolute best it can be:

  • The pesto goat cheese mixture can be made and kept ahead of time
  • You can use store bought pesto or my fresh homemade pesto recipe
  • This recipe can be doubled if you need to make a larger batch
  • I used store bought jarred julienned sun dried tomatoes, because who has time to make that from scratch?!
  • I used the Athens Phyllo shells for this recipe
  • These can be served cold or you can toast the filled cup for a few minutes if you’d like

Pesto Goat Cheese Bites

Servings: 15 cups

Ingredients

  • 15 phyllo cups
  • 6 oz goat cheese
  • 2 tbsp pesto sauce
  • chopped sun dried tomatoes for garnish
  • pine nuts for garnish

Instructions

  • Heat oven to 350 degrees and toast the phyllo cups for 3-5 minutes and set aside
  • While the cups are heating, put your goat cheese and pesto in a food processor and blend until combined and creamy
  • Put the goat cheese mixture into a piping bag or a ziploc bag and cut a slit and pipe into each cup
  • Top with a piece of sun dried tomato, basil, and pine nuts
  • Serve immediately!
