Ingredients

  • 8 oz pasta boiled and drained
  • 1/4 cup pasta water reserved
  • 2 tbsp butter
  • 1-2 cloves fresh garlic minced
  • 1 cup heavy cream
  • 1/2 cup fresh grated Parmesan cheese plus more for garnish
  • 1 tsp cracked pepper
  • 1-2 tsp red chili flakes
  • 1-2 green chili minced
  • 1-2 tbsp hot sauce of choice
  • 1 tbsp dried parsley

Instructions

  • Boil pasta according to package instructions, drain, and set aside
  • In a pan, melt butter and garlic then add heavy cream and mix well. Once combined, sprinkle in the fresh grated parmesan and stir until cheese is combined and sauce thickens
  • Add in cracked pepper, red chili flakes, minced green chili, and hot sauce and mix well until spices are well combined and sauce starts to absorb some of the flavor
  • After 3-5 minutes add in dried parsley, boiled pasta, and reserved pasta water and mix well until all ingredients are combined
  • Let flavors combine and coat pasta for another 2 minutes or so. Then garnish with fresh cheese, chili flakes and parsley and serve hot!

Notes

  • Feel free to use any sort of pasta for this recipe, the sauce is super versatile
  • Fresh grated parmesan cheese melts better than store bought pre-grated cheese, so don't skip on this! I used BelGioioso Parmesan Cheese for this recipe
  • I used Brooklyn Delhi Guntur Sannam hot sauce, but you can use anything you have, Tobasco would also work really well!
