Black Bean Street Tacos with Chipotle Sauce

A healthy-ish, easy and quick dinner fix that is perfect for Taco Tuesday!

Happy New Year’s guys! I know it’s been a while but I’m back and ready to share some delicious, homemade recipes with you guys! I’ve got the perfect, healthy-ish recipe for you to make for Taco Tuesday! It’s hearty, tasty, and is ready to go in just about 30 minutes! Honestly, I’m not a huge fan of beans and even if I do eat them in my Mexican food, I don’t like to overstuff it with too many beans, but this is one recipe that just tasted so good! All the flavors mixed together so well and tasted so delicious! Honestly, the most time consuming part of this recipe is chopping the veggies. I love a good taco and this definitely satisfied that craving! The best part is, I used the Mission Carb Balance Street Tacos, which were only a total of three net carbs per tortilla! They tasted just as good as regular street taco tortillas, but without all the guilt! The spicy bean mixture, paired with the shredded cheese, crunchy lettuce, and creamy Chipotle sauce was just a match made in heaven! You can also prep all the veggies beforehand so that they are ready to go for whenever you made the filling! You can also make these tacos cheesy by just putting the tortillas on a hot pan, sprinkling cheese on top and then cover and cook until the cheese is melted! Then just continue assembling the taco as normal and you’ll have yourself a nice, cheesy, taco!

Here are a few tips to help you with this recipe:

  • Lightly roasting the tortilla on an open flame will help char the tortilla a bit to give it a nice flavor
  • You can adjust the spice based on your preference, but the recipe as is will be a nice level of spicy
  • This is a great recipe to prep ahead of time or make a “create your own” taco bar with
  • Feel free to have fun with your toppings!
  • If you have extra time, throw some avocado or guacamole on top, and it will be absolutely delicious!

Black Bean Street Tacos with Chipotle Sauce

Servings: 10 Tacos

Ingredients

For the Tacos:

  • 1 16 oz can of black beans
  • 1/2 bell pepper chopped any color
  • 1/2 small onion chopped
  • 1/2 jalapeno or serrano pepper diced
  • 1 tbsp oil
  • 1 tbsp tomato paste
  • 1-2 tbsp taco seasoning
  • 1 tsp Trader Joe's Everything but the Elote seasoning optional
  • 10 street tacos
  • shredded Mexican cheese for topping
  • shredded lettuce for topping
  • chopped onion and cilantro for garnish

Chipotle Sauce

  • 1/2 cup Greek yogurt
  • 1/8 cup water
  • 1 tsp sauce from chipotle in Adobo sauce
  • 1 chipotle pepper from chipotle in Adobo sauce
  • 1 tsp onion powder
  • 1 clove garlic chopped
  • small handful of cilantro
  • salt to taste

Instructions

For the Tacos

  • In a pan, heat up some oil and then add in the onions, peppers, and jalapenos and cook until slightly softened
  • Then add in the taco seasoning, elote seasoning (optional), and tomato paste and mix until combined. Feel free to add in a tbsp or two of water if it starts to stick to your pan
  • Once the mixture is cooked, turn off the heat and set aside

For the Chipotle Sauce

  • Put all ingredients in a blender and blend until smooth and creamy

Assembly

  • Lightly roast the tortillas on an open flame so they become a little bit charred
  • Add in a heaping spoonful of beans to the taco, top with cheese, lettuce, onions, cilantro and some chipotle sauce
  • Serve immediately and enjoy!

Notes

  • Pro Tip: If you want a cheesy taco, you can put your tortilla on a pan and sprinkle cheese on it and cover until cheese is melted, then continue assembling the taco
  • I used the Mission Carb Balance Street Tacos to keep it healthier but you can use any street tacos you’d like!
